Thai-Inspired Napa and Kohlrabi Slaw

  • 1 kohlrabi, peeled and chopped into matchsticks
  • 1 head napa cabbage, thinly chopped
  • 1 bunch radishes, thinly sliced into rounds

Dressing:

  • 2 Tbs. rice vinegar
  • 3 Tbs. soy sauce
  • juice of 1 lemon or lime
  • 1/4 cup olive oil
  • 1 garlic clove
  • 1 Tbs. fresh ginger, minced
  • 1 Tbs. honey or maple syrup
  • salt and pepper

Combine kohlrabi, napa and radishes in a large bowl. Whisk together dressing and toss to coat. Feel free to add shredded carrot, thinly sliced sweet pepper, or whatever else you have on hand.

Optional additions: chopped peanuts, cilantro or fresh mint, scallions, or diced hot pepper.
