Sweet Melon Salsa

1 1/2 cups finely chopped cantaloupe

1 shallot minced (or sweet onion or leek)

1/2 large green pepper, finely chopped

1 Tbls minced fresh cilantro (or parsley)

1 or 2 hot peppers, seeded, and finely minced                   

1/4 tsp salt

Juice of 1 lime (approx. 3 Tbls)

1/4 tsp honey, turbinado, or brown sugar

Combine all ingredients.  Refrigerate for at   least half an hour to allow flavors to blend.  Yield:  2 cups
