Roasted Kohlrabi

4 – Kohlrabi bulbs peeled

1 – Tablespoon of olive oil

1 – Clove of garlic, minced

1/3- cup parmesan cheese or more

Salt and pepper to taste

Pre-heat oven to 450 degrees. Slice kohlrabi ¼ inch thick and then slice in halves. Combine olive oil, garlic, salt and pepper. Add kohlrabi slices and stir to coat. Spread kohlrabi slices in a single layer on a shallow baking dish. Bake for 15 to 20 minutes stirring occasionally for even browning. Sprinkle with parmesan cheese and bake for 5 more minutes or until cheese is brown.

Variation:  Add diced ham, diced potato, and sliced carrots before baking.
