Oven Fries

Prepare pan(s): baking sheet with parchment or silicone mat. 2 medium potatoes per pan maximum. Leaving space allows potatoes to brown.

Preheat oven: to 375 degrees. (you may use convection at 350-375 degrees if you have it, but it is not necessary)  

1 medium to large potato per person. Kennebec potatoes are great for this recipe- but any type of potato works well!  

Scrub potatoes. Cut potatoes into desired fry shapes- fingers or dollar fries. Rinse cut potatoes in very cold water for a couple of minutes. Spin dry or drain well and pat dry with clean tea towel. Place in a large bowl.  

Seasoning options- Sprinkle over:

1-2 tsp vegetable oil (completely optional)

Salt, to suit your taste

Herbs and seasoning of choice:

A light sprinkle of garlic powder and/or onion powder.

Dried dill, oregano, thyme etc.

A light sprinkle of fresh ground pepper or cayenne pepper  

Use whatever seasonings you like- experiment!  

Toss everything together thoroughly.

Spread them out in a single layer on prepared pan. Bake 375 degrees for 15 minutes. Remove from oven carefully. And turn fries over on the pan. Return pan back to oven for an additional 10 to 15 minutes or until desired browning is reached- also being careful because they can burn on the bottom if left too long.  

Remove from oven and serve with your favorite condiments. Obviously ketchup is an all time favorite. Enjoy!
