Kale with Lemon Balsamic-Butter

1 large bunch kale

1 tbsp. butter

1 tbsp. balsamic vinegar

1 tbsp. lemon juice

1/4 c. raisins

1/4 tsp. salt

a dash of ground black pepper


Remove stems and center ribs from kale. Chop coarsley. Place in pot with an inch of water. Cook on med. high to steam kale, until wilted and bright green. Remove from heat and drain well. Place steamed kale in a bowl.

Melt butter in small skillet over medium heat. Cook 3 minutes or until lightly browned. Stir in raisins, lemon juice, and vinegar. Cook 30 seconds, stirring constantly with a whisk. Pour butter mixture over kale. Add salt and pepper. Toss well to coat. Taste and adjust seasonings as needed.

Serves 2-4.
