The greenhouse is starting to fill with plants again.  Have onions, cabbage, kale, lettuce, and broccoli growing.  Wanted to plant peas today but it is snowing and we have almost 2".  Must be Spring!!

Rodney has been picking corn from the corn maze and putting it on racks in the greenhouse to finish drying.  This is our non genetically modified field corn.

He got a fancy corn sheller for Christmas and has been feeding the chickens fresh corn all winter.

Last week we ground some for cornmeal and I made cornbread.  Was wonderful.  Has great flavor!!

We will be selling it whole or ground in 1 pound pkgs.

Just hard to believe its almost the 4th of July. 

Things are really growing.  We are pulling the last of the row covers this week and planting more lettuce and radishes.

We tried a new recipe this week.  Kale chips.  It is really good.  I have never grown Kale before

and hadn't even eaten it so this was really new.

To make them take one bunch of Kale and cut across the leaves in half inch to 3/4 inch strips.

I didn't use the big part of the stems.  Spread them out on a cookie sheet and drizzle with olive oil and stir them a little until coated well.

Bake at 400 degrees until crunchy but not too brown.  Maybe 10 min.

Remove from oven and sprinkle with a little salt and I used som parmessan cheese.

They are crunchy just like a potato chip.

We planted 48 trays of tomatoes today.  Some new varieties and lots of old ones.  Can almost taste them.

What a surprise when they were picking winter squash.  This trombocino squash crossed two other rows of squash to find this pumpkin and then he grabbed hold and just about squeezed her to death.  Must have been true love at first sight.

We are ready to take sign ups for our 2011 CSA season.  We've added a new size this year for
those of you who can't use all of your produce in a week.  This is sized for a single adult.  Not as much variety but still the best fresh local produce.

We are going to use PayPal this year for credit card processing.  Not sure it is up and running yet but it will be soon.  Because of the extra cost for us to take credit cards we are giving a $10 coupon good for anything from Val's Veggies, to all who pay by check or cash. 

I'm hoping for an early spring!  The ground hog didn't see his shadow.  I planted onions last week and they are up and growing.  Will start celery, leeks, and cauliflower next week.  I'm really getting spring fever. Got several new heirloom tomatoes to try and also some new corn varieties.  Can't wait!!!

Tomorrow is egg share day in LaGrande.  The chickens are really liking this warmer weather.  They think Spring is just around the corner.  I went by the chicken house on my way to check cows yesterday morning and it was still really dark out but they were singing and talking so loud!!!  Usually they are still in bed.
We have some winter squash still and I have been doing the KaKai pumpkin seeds up.  They are $4.00 a pound.  Real good raw or roasted with a little olive oil.
